The olive mill incorporates a complete, state-of-the-art production line. The receiving area includes a hopper, several conveyor belts, a continuous weighing scale, and a 15,000 kg/hour cleaner-washer with destemmer, as well as two 40,000 kg olive storage hoppers. The extraction room features a 40 HP crusher, a high-capacity mixer, a mash pump, a 2,500/3,000 kg/hour Pieralisi centrifugal decanter, a vertical cleaning centrifuge, and a panoramic sieve.

The oil rests in a wine cellar with a total capacity of up to 190,000 liters and is refined using a self-cleaning earth filter. For distribution, the property has two separate bottling areas , equipped with filling and labeling machines for different formats, along with storage areas for containers—plastic, glass, and cardboard—and for the finished product ready for sale.

The complex is completed by a separate social building that houses a property and offices, in addition to a second office area in the warehouses, a changing room with shower and toilet, as well as boilers and electrical panels.
